The team has achieved numerous accolades, including a Michelin star and placement on the <em>World's 50 Best</em> list. <em>Brat</em> is committed to fostering an environment where everyone feels welcome, included, encouraged, and challenged, with genuine career progression opportunities.</p><p><br></p><p>We’re looking for an enthusiastic Sommelier to join our team.</p><p><br></p><p>What you’ll be doing:</p><ul><li>Deliver memorable guest experiences through table-side consultations, curated pairings, and storytelling that brings the wine list and our menu to life.</li><li>Lead with passion and enthusiasm, motivating the FOH team to embrace and represent Brat’s wine program with confidence and knowledge.</li><li>Working across a range of service areas in a dynamic venue, engaging with not just wine, but all aspects of the guest experience.</li><li>Engage with winemakers, importers, and distributors to secure exclusive bottles and vintages.</li><li>Assist with the proper storage, care, and rotation of the wine cellar to ensure optimal conditions and reduce waste.</li><li>Participate in a structured wine education program for the FOH team, including tastings, service training, and knowledge sharing.</li><li>Work closely with the wider wine team to monitor margins, plan reorders, and ensure consistent stock levels across all wine offerings.</li></ul><p><br></p><p>What you’ll bring:</p><ul><li>A deep, demonstrable knowledge of wine, from classic regions to emerging producers, with a strong understanding of how wine enhances food.</li><li>2–5 years of experience in a wine or sommelier role within a fast-paced, quality-led restaurant.</li><li>Excellent communication and storytelling skills that engage both guests and team members.</li><li>Experience mentoring and educating others in wine knowledge, from beginner to advanced levels.</li><li>Organisational skills and experience managing wine inventory.</li><li>A genuine enthusiasm for hospitality and the guest experience, with a passion for sharing the craft and culture of wine.</li><li>Flexibility to work varied shifts across 5 out of 7 days.</li><li>Full UK right to work documents.</li></ul><p><br></p><p>What’s in it for you:</p><ul><li>28 days of annual leave, including bank holidays.</li><li>Access to courses, resources, and training to enhance your wine and leadership career.</li><li>50% discount at all our restaurants, along with complimentary staff meals during your shifts.</li><li>Discounted dining at various local establishments near Super 8 Restaurants.</li><li>Enhanced maternity leave, pension scheme, subsidised mental health support, and a cycle-to-work scheme.</li><li>Refer a Friend scheme—recommend someone to join Super 8 and receive a bonus!</li><li>Opportunities for international and national travel to visit our winemakers and suppliers.</li><li>£300 contribution towards the purchase of a work laptop for all salaried staff members.</li></ul><p><br></p><p>If this role sounds like a great fit for you, we’d love to see your application.</p>
