Impala
Impala is an open fire grill restaurant led by chef Meedu Saad, co-owner and executive chef of Kiln, with influences from North Africa to North London. This project is a culmination of recipes and techniques collected from the unruly metropolises that have shaped Meedu’s cooking.
Our restaurant's larder is built across the seasons, and an absolute focus on quality of ingredients founded upon long term farming projects. The room, led by Fanny Derozier, who has spent the last six years at Kiln, will have an atmosphere which recalls the energy of the Friday markets of Cairo, colliding with a Soho bar. The wine list, led by Penny Vine and Martina Lanarch, will focus on offering multiple cuvées and vintages from producers whom they are inspired by.

We're on the hunt for an experienced Maitre'D to join our team at Impala!
What You’ll Be Doing
- A warm, welcoming presence with a genuine love for hospitality and creating meaningful guest experiences.
- Confidence and expertise in managing and driving the door, handling reservations, and responding to guest inquiries promptly and within the tone of the restaurant.
- Working with the site management and Head of Marketing to find opportunities to drive more covers, including working with local businesses, concierges and residents.
- Using systems such as SevenRooms to manage bookings, create optimal floor plans, maximise covers working with the floor and kitchen team.
- Creating and maintaining guest profiles that can be used across all Super 8 sites.
- Supporting the team to deliver consistently excellent hospitality in a lively, fast-paced environment.
- Creating a who's who of regulars and vips to ensure the front of house team have guest awareness.
- Acting as the first point of contact for guest feedback and complaints to ensure a timely reply to the guest.
- Training team on how to use systems and steps of service for door and welcome.
What You’ll Bring
- A warm, engaging presence with a genuine love for hospitality.
- Proven experience in a busy, high-energy restaurant setting.
- Familiarity with reservation platforms preferably SevenRooms.
- Clear, confident communication skills and the ability to stay calm under pressure.
- Leadership and delegation skills including the ability to train and mentor floor team.
- A passion for the London food scene, and fresh seasonal produce.
- Full UK right to work documentation.
