Smoking Goat is an open-fire Thai barbecue restaurant and bar, serving food inspired by the street food of Bangkok. We're a busy restaurant that works closely with exceptional farmers and offers a daily-changing menu. Our drinks programme includes unique beers, natural wines, and a growing vinyl record collection.
We’re looking for a Bar Manager to join our team and help us deliver exceptional drinks experiences that reflect our produce-first, seasonal approach.
What you’ll be doing:
Bar Creativity & Seasonal Innovation
- Bring a deep knowledge of traditional cocktails while developing original recipes that reflect our produce-first approach.
- Collaborate with the kitchen and sourcing teams to align drinks with seasonal menus.
- Help shape our evolving drinks list and contribute ideas for specials and new offerings.
Manager Support & Service
- Confidently deliver bar and floor service, ensuring guests feel welcomed and well looked after.
- Support the wider FOH team across all areas of service as needed.
- Contribute to a lively, respectful team environment focused on high standards and positive energy.
- Manage opening and closing procedures, including cashing up.
- Prepare the weekly bar rota within budget set by the General Manager, ready by Tuesday each week.
Training, Leadership & Development
- Hire and manage a bar team that delivers top-class product and service.
- Support bar supervisors in training the wider bar and FOH team in drinks knowledge and service.
- Share your skills and enthusiasm with junior team members, building a culture of learning and collaboration.
- Take on increasing responsibility as your experience and role grows.
Stock, Suppliers & Accountability
- Oversee stock management, ordering, and accounting processes.
- Build strong relationships with suppliers and producers, supporting the General Manager in sourcing and logistics.
- Maintain clean, organised, and well-stocked bar spaces.

- Strong foundation in traditional cocktails and a love for experimenting with fresh, seasonal ingredients.
- Comfortable delivering floor service and working across the full FOH team.
- A team player with a collaborative mindset and positive energy.
- Highly organised, with a keen eye for detail and quality.
- Passionate about produce, hospitality, and learning new skills.
